Quick Bean Soup

quick bean soupQuick Bean Soup has been a favorite of my family for 25 years now. 

1-lb. can baked beans (or any kind of beans)
8-oz. can tomato soup
1 pkg. dried onion soup mix
3 c. water

Combine all ingredients into a medium-large pot. Bring to boil. Cover and simmer for 20 minutes. Makes four servings.

Awesome on a little chili night.

 

Quick Turkey One Pot Casserole

Cast-Iron-Skillet-Chicken-Casserole62 cans turkey
1 pkg. elbow macaroni
1 can cream of celery soup
1 pkg. vegetable soup mix

Cook the macaroni, drain the water, saving 1 cup. Add the soup mix with the water, simmer for 2 minutes. Add the can of cream of celery soup and the canned turkey. Heat to bubbling and serve

This is an Awesome Meal and very fulfilling

Beef Goulash

3 lbs beef, cubed
1 tsp salt
2 tbsp. Cooking Oil
1 can mushroom soup

Brown beef in the cooking oil in the open oven; add salt and con of soup. Place lid on Dutch oven and cook over low fire 1 hour; add water if needed. Serves 8

Variations

  1. Add some chopped carrots or onions
  2. Use vegetable soup instead of mushroom soup
  3. Use 1 can soup and 1 small can or corn

Bread on a Stick

  •     2 handfuls of flour
  •     small amount of baking powder
  •     a pinch of salt
  •     quarter tin can of grease or lard
  •     over half a tin can of warm water

Mix everything but the water with your fingers until crumbly. Slowly add water and mix until dough feels soft. Don’t add more water, but keep working the dough till it holds together. Take a small handful and wrap around the end of a green stick, and work it so it stays together. Cook over coals, rotating to cook evenly.

Sausage and Potatoes Dinner

Ingredients: 

4 Links of Italian Spicy Sausage (or Turkey)
1 lb of Potatoes, chopped into bite size pieces (brown potatoes is what I used)
3 Tbsp of Veg. oil or peanut oil
2 Tbsp of Chopped Parsley
Pinch of Salt and Pepper

What to Do:

  1. Add the potatoes to a saucepan, cover with water and bring to a boil. Boil them for about 6 to 7 minutes or until they are about 3/4 of the way cooked through, drain well, set them aside on a paper towel lined plate and pat them dry as much as possible. Set them aside.
  2. Slice the sausage lengthwise, making sure not to slice it all the way through. Open it (like a book) remove the casing and flatten the sausage patty with your hand a bit to get it nice and even.
  3. Preheat a large skillet over high heat, add the oil and make sure it’s nice and hot, add the flattened sausages and cook them for about 3 to 4 minutes on each side or until deeply browned and crispy, remove to a plate and cover with foil to keep warm.
  4. Reduce the heat to medium, add the potatoes making sure they are in a single layer, and cook them for about 7 to 8 minutes giving them a toss every couple minutes to insure every piece is crispy and golden brown.
  5. Stir in the parsley, remove from the heat and serve with the crispy sausage.

Ya, I know… It Happens!

Well you can only eat out so long till you’ll get tired of the food. Also, there is nothing worse than settled in to watch some TV and then figure out your starving. So here is a couple of tips for those of you who’ve become single once again and was thrown out with pretty much nothing.

Supplies and Ingredients to Keep Handy

Typically if you’ve been evicted you probably are in an efficiency appartment or something temporarily. Here are some thing that you’ll need:

Supplies

A set of pot with the lids
A frying pan
Cookie sheet
Spatula
Silverware
Sharp cutting knife
Measuring cups and measuring spoons
Tupperware
A mixing bowl

Basic Ingredients

Eggs
Bread
Peanut Butter and Jelly
Pasta
Marinara sauce
Canned soup
Chicken breast
Ketchup
Mayonaise
Herbs – salt / pepper, seasonings


The Forgotten Meal

Cooking breakfast doesn’t have to be a long expensive process. It only takes a few minutes to scramble some eggs and make a breakfast burrito that is easy to eat on the go. To cook a breakfast burrito at home costs about $2.50. To buy a bacon, egg and cheese bagel at Dunkin’ Donuts costs $3.29.

Breakfast Burrito

Ingredients

2 eggs
2 strips of microwaveable bacon
Handful of cheddar cheese
Flour tortilla

Directions

Scramble eggs in a greased frying pan. Reheat bacon in the microwave according to package directions. Place scrambled eggs, bacon and handful of cheese in a wrapped tortilla.


Satisfying the Afternoon Hunger

Around one o’clock the stomachs start to rumble. It’s lunch time! Why not make a homemade pizza? Lots of supermarkets like Publix sell pizza dough in the bakery section. This is an easy recipe that takes very little prep time and can cook in the oven while students are studying.

It is cheaper to make a homemade pizza than to order one from a pizza place. Depending on the pizza toppings, a large homemade pizza ranges in cost from $8 to $10. A large two-topping pizza from Papa John’s Pizza cost $12. Not only is it cheaper to make a homemade pizza but it is also faster than waiting for the pizza company to deliver one.

Homemade Pizza

Ingredients

Pizza dough (could use bread)
Marinara sauce (or Pizza Sauce)
1 1/2 cup of cheese
Pepperoni, hamburger, sausage, whatever
Mushrooms
add olives, peppers, anything you like… ham and pineapple

Directions

Roll out the pizza dough. Spread marinara sauce over the dough. Then add cheese and pizza toppings over the sauce. Bake in a 400 degree oven for 20 minutes.


The Big Sha-Bang

When it comes time for dinner we need some food.hungry.  This enchilada recipe is sure to fill you up, and at a cheaper cost than most take-out restaurants. El Paso’s recipe makes 6 enchiladas so there is sure to be enough food for a friend or for leftovers. To make El Paso’s enchilada dinner it costs about $10.

Enchiladas

Ingredients

1 lb uncooked boneless chicken breast
1 Tbsp margarine or butter
1/2 cup of water
3/4 cup of shredded cheese
El Paso’s enchilada kit

Directions

Heat oven to 400 degrees. Cut chicken into 1/2-inch pieces. Melt margarine in a skillet over medium-high heat. Add chicken and cook until no longer pink. Stir in water and seasoning mix. Cook uncovered for 4 to 8 minutes. Grease pan and fill each tortilla with chicken filling; roll up. Place opening down in the pan. Pour enchilada sauce and cheese over the enchiladas. Cover pan with foil and bake 20 to 25 minutes


 

Cooking Definitions

Baste: To spread, brush or spoon water, melted fat or other liquid, such as chicken broth, over food to keep the surface moist and add flavor.

Blanch: To boil in water for a short time and then plunge into cold water, or to pour boiling water over food, then drain it almost immediately. Often used to preserve color in vegetables or to loosen the skin of tomatoes.

Boil: To cook in boiling water or other liquid. Liquid is at a boil when large bubbles rise continuously to the top.

Marinate: To let foods stand in a liquid mixture. Refrigerate, covered, if marinating more than two hours.

Poach: To cook in water, broth or other liquid that is just below the boiling point.

Roast: To cook by dry heat in the oven. Sear: To brown surfaces quickly over high heat, usually in a hot skillet. Often an instruction at the beginning of meat preparation.

Simmer: To cook in liquid at a low temperature. Be sure the liquid does not boil.

Steam: To cook, covered, over a small amount of boiling liquid so the steam formed in the pan does the cooking.

Saute: To cook briskly in a small amount of fat, usually in a skillet on top of the stove. Same thing as pan-fry.

CyberHobo’s Chili Pie

SDC156524 cups corn chips
1 can Hormel Chili (I like it best… with or without beans)
1 1/2 cups shredded Colby or Cheddar cheese

Layer 2 1/2 cups of corn chips; 1/2 cup cheese and chili in 1 1/2 quart casserole or Dutch oven. Top with remaining corn chips. Bake at (375) or over camp fire, about 25 minutes. Top with remaining cheese and bake 5 minutes longer. Garnish with sour cream if you have any!

Cookin’ In a Milk Can

xlargc__08261.1345434542.1280.1280The milk cans come in various sizes, the biggest being 10 1/2 gallons. That can is about 3 1/2 feet tall and about a foot in diameter. I personally would by a new one and then you’ll have something to pass along to generations to come. I don’t know if I’d trust a used one from someone I didn’t know.

They have enough room for Cyberhobo to put in ~25 lbs of potatoes (I like the little red ones), ~a bunch of carrots, ~maybe peppers, ~some people add some onions, ~and several roasts. Spice everything to your liking’ , added some water and put it over a propane burner with the lid slightly cracked to allow the steam to escape and slow cooked it for several hours. You can smell it all over the property when it’s cookin’. When everything is done, the roasts will be so tender they fall apart with your fork and the vegetables should be done – but not mushy.

People and Hobos have been cookin’ these dinners for years! Try a milk can dinner for your next family / friend gathering and see how it is. I bet a tradition starts.

The downside to the milk can / cream cans is they’re not cheap. This one cost $239.00 (I got FREE shipping) but I’m sure my grandkids will be cooking dinner for their grandkids out of it. Talkin’ about how ol’ grandpa bought the dang can bang in 2013.

CyberHobo Fried Brown Rice

2 large eggs
12 baby carrots, chopped
1 tablespoon oil (peanut / vegetable)
8 ounces mushrooms, sliced
1 tablespoon minced garlic
1/4 cup sherry wine (or wine)
3 tablespoons soy sauce (about 6 packets)
4 cups cooked brown rice, cold
1 bunch green onion, sliced
1 cup frozen green peas
1 1/2 tablespoons sesame oil

Directions:

1. Spray a deep skillet cooking spray and heat on medium.
2. Beat eggs lightly, pour into pan, and cook without stirring until they are almost dry.
3. Remove to a plate and set aside.
4. Heat oil in same pan over medium high heat and add carrots and cook, stirring from time to time, for about 2 minutes.
5. Ad mushrooms and garlic and cook and stir for 2 more minutes.
6. Add the sherry, soy sauce, and cooked rice. Continue to cook, stirring from time to time, for about 3 minutes.
7. Add green onions, peas and sesame oil.
8. Cut the eggs into thin ribbon strips, add to pan, and toss well to mix all ingredients.
9. Serve at once with extra soy sauce if desired.

CyberHobo’s Jungle Pizza!

Ingredients:

  • Canned pizza dough (but any will work)
  • Jar of pizza sauce (any kind will work)
  • Package of mozzarella cheese
  • Favorite toppings… (ham, pineapple, pepperoni, mushrooms, Canadian Bacon, sausage, hamburger, olives, etc)
  • Dried Italian seasoning , dash of salt and pepper, and maybe some crushed red pepper.

Directions:

Roll out pizza dough to form a rectangle. Spread pizza sauce over top. Top with cheese, additional toppings, and add seasonings.

Roll pizza up to form a log and tuck edges in. Wrap in thick foil. Place in freezer / cooler until ready to cook. Before cooking make sure it’s almost thawed. Place pizza log, still in its foil on hot grill or fire pit. Cook for about 15 minutes flipping over and cook an additional 10-15 minutes.

Slice pizza for everyone to eat!
