Camp Fire Pizza!

canned pizza dough (in refrigerator section)
pizza sauce
mozzarella cheese
Your families favorite toppings! – mushrooms, peporoni, sausage, olives, ham, pineapples, etc.
Dried Italian seasoning and a dash of salt and pepper
Roll out pizza dough to form a rectangle. Spread pizza sauce over top. Top with cheese, additional toppings, and add seasoning. Roll pizza up to form a log and tuck edges in. Wrap in thick foil.  If you had prepared this and put it in freezer, place in cooler or set out until almost thawed. Place pizza log, still in its foil on hot grill or fire pit. Cook for about 15 minutes flipping over and cook an additional 10-15 minutes. Slice pizza !

Pasta with Peanut Sauce

  1. Thai Peanut Butter NoodlesCook some pasta noodles.
  2. Drain Pasta when it’s tender. (keep a little of the hot water)
  3. In the pasta pan, add some peanut butter, garlic powder, dried crushed red peppers and the hot water. (any pizza place offer crushed red pepper, I go in a say my wife picked up a pizza a little bit ago can I get some of the Parmesan cheese and red peppers) Stir mixture and add more hot water if necessary.
    • I’ve used peanut butter and the hot oil sauce from a Chinese restaurant and it was good.
  4. Chicken can be added, if you choose.
  5. I garnish with a few peanuts if I have any

Inexpensive dinner and pretty good.  Cost about $1 if you have pre-gathered condiments.

Corn-Broccoli Casserole

I had to share this with everyone… nobody has been disappointed with it.

Yellow squash, zucchini, cauliflower and a wide variety of other vegetables can be substituted for the broccoli with impressive results. This one-dish supper can be made in about 15 minutes of hands-on time if you are using pre-shredded cheese and frozen broccoli. If you use fresh broccoli, it should be steamed first.

1 can corn, drained
1 can creamed com
1 1/2 cups shredded cheddar cheese
4 eggs, beaten
3 cups frozen broccoli, thawed and chopped into 1/2″ chunks
1 small onion, minced
2/3 cup milk
1 sleeve saltines, crushed
2 tablespoons margarine, melted

Preheat oven to 350 degrees. Combine first 7 ingredients and 3/4 cup of saltine crumbs. Pour into 10 1/2″ metal-handled frying pan or large casserole dish. Combine remaining crumbs with margarine and use to top casserole.

Bake uncovered for 40 minutes or until firm. Serves eight.

Chicken Salad Salsa Wraps

Feeds 2 people a nice lunch or dinner

2          (10 ounces) cans of shredded chicken breast, drained
4          large lettuce leaves
3/4       cup of mayo (or about 15 packets from local store)
1/4       cup shredded cheddar cheese (or about 4 slices cut up)
1/2       cup salsa (bunch of Taco Bell Sauce)

Combine chicken, mayo, and cheese. Divide filling among each lettuce leaf, and top with salsa. Wrap up lettuce leaf and enjoy.

Rich’s Jalapeno Corn

4 cans whole kernel corn (drained)
4 ounce package of cream cheese
3 tbs. butter
little garlic
chopped jalapenos to taste

Melt butter in 2 quart pan, add cream cheese, whip together until creamy and smooth. Add drained corn. Add 2 tbs. jalapeno juice. Stir well. Prior to serving add chopped jalapenos. The longer the jalapenos are in the corn, the hotter it will be.
